Amazing! A new favorite of mine.
2/3 cup Vegenaise (I use grape seed oil vegenaise)
1Tbsp curry powder
4 cups shredded chicken
1/2 granny smith apple
1/2 cup white onion
1/4 cup raisins
1/4 cup fresh parsley
1Tbsp lemon juice
1/2tsp salt
1/4tsp pepper
Mix all together and enjoy!
I put mine over Romaine lettus and it was super yummy!
You could also put inside a pita pocket or just eat it by itself!
